eBlon Cachaça L Cachaça, the third-most consumed spirit in the world is made from fresh sugarcane, not molasses and in blind tastings Leblon Cachaça fools nine out of ten bartenders into thinking it's tequila. Steve Luttmann, founder of Leblon, maintains strict controls over every aspect of production, from the field to the distillery— from cutting the cane and its immediate pressing, to an arti- sanal distillation in custom-made alam- bique copper stills. "We make a cachaça with French winemaking techniques, and take a lot of care to get a very fruity juice—almost like a Sauvignon Blanc or Char- donnay," Luttmann explains. "We then age it in XO Cognac casks to polish it and take out the bite." Fiori di orancio (Orange Blossom) • 1 ¾ oz. LeBlon Cachaça • ¾ oz. rosemary syrup • ¾ oz. fresh lime juice • 1 oz. fresh blood orange juice • Charred half-shell blood orange Fresh-squeeze charred blood orange and hand clap fresh rosemary. Add all ingredients into a shaking tin. Shake and strain into rocks glass filled with ice.
