{ SOMMjournal.com }  93 SEMINAR: PASTRIES AND PROSECCO City: Miami by Jessie Birschbach / photos by Ryan Stone Before we bit into the meat of the day and the first seminar, Advanced Sommelier Daniel Toral, Wine Director of 50 Eggs Inc. and our Headmaster at the Miami campus, insisted we touch upon the Prosecco we enjoyed in reception along with pastries, fruit and coffee. (By the way, in Miami, it really was a campus—we kicked of the tour at Johnson & Wales University. The wines in a few of the seminars were served with a tasting menu developed by student and alumni chefs, which made each of the seminars a little more endearing.) Says, Toral, "You often don't see this 'rive' Prosecco on the market." He was referring to the Maschio dei Cavalieri "Rive di Colbertaldo" Prosecco, and by "rive," he means cru or certain favored hillside vineyards between 50 and 500 meters above sea-level located in the Conegliano Valdobbiadene Prosecco DOCG. There are 43 "rive" designations, and this Prosecco boasted 100% Glera from the Rive di Colbertaldo. These rives are held to even higher standards, and this particular wine was gently pressed and fermented in a temperature-controlled stainless steel tank that then goes through secondary temperature-controlled fermentation in autoclaves.
