"Bring me a bottle of your very best red wine," says the gentleman. "Well, what do you enjoy?" the sommelier asks. "Something dry," they respond, not realizing that this describes the majority of red wines on the list. In my experience, consumers often have great difficulty describing what types of wines they prefer, yet they know exactly what they do like once they've tasted it. Everyday, sommeliers and wine shops are tasked with guiding consumers through a vast portfolio of uniquely different wines, but it's difficult to help a customer define why they might enjoy one Cabernet Sauvignon over another. Herzog Wine Cellars' recent addition to its portfolio, Variations, seeks to alleviate some of the mys - tery for consumers as they discover their pal- ates' personal preferences.
