Mix Mix Kitchen Bar Downtown Santa Ana | www.MixMixKitchenBar.com An Orange County native, Chef Ross Pangilinan discovered his passion for cuisine at a young age. "Cooking shows sparked my inter- est and my dad exposed us to a lot of different cuisines — from high end French to hole-in-the-wall restaurants, going to Chinatown, trying Philippine or Indian, as well as expensive chef-driven restaurants." His culinary journey brought him from France to Vegas, helping one restaurant earn a Michelin star, before he finally returned to his SoCal stomping grounds to present Mix Mix, a global dining con- cept. Along with his experience, he also brought his wife and kids, Madeleine, 4 and Maddex, 2. In fact, "Mix Mix" was in their honor, and a spot they are very hap- py to visit. Balance is a challenge, but one Chef Ross is managing nicely. "Just opening up a brand new place is time consuming, but I get a lot of time with the kids in the morning and on my days off. My wife brings them in for dinner some nights and I bring them with me to work occasionally. My son really loves being in the kitchen, he likes watching me and tries to participate." Chef Ross doesn't mind kids in his restaurant. He recently went above and beyond by inviting a group of Girl Scouts to cook with him. Not only were the kids welcomed into a professional kitch- en, together they created a rather sophisticated Girl Scout S'mores Cookie Parfait — S'mores Cookie milk panna cotta, S'mores crum- ble, Valrhona-manjari cremeux, torched nitro marshmallows — which each girl then made on her own. "We don't print an official kids menu — we always have butter noodles or fish, steak or chicken with vegetables, most of the time I don't even charge much or anything for the kids. It's just something I like to do. In May or June, I'll be starting Saturday morning cook- ing classes which I hope parents will bring their kids with them." Another good opportunity to try out the menu with adventur- ous young eaters is to pop in to the just launched pop-up lunch. Diners can pick a salad, snack and main in a hip style of modern bento box featuring flavors from Mexico to Morocco and tech- niques from Paris to the Philippines. Created for business diners, all courses come at once, so no need for long attention spans. We love Sunday Brunch with the Crispy Duck on French Toast, a great time for families. The Poke Nachos, served over house chicharones no less, Potato Chorizo Croquettes with Jalapeno Lime Aioli and Soft Egg Raviolo with Herb Ricotta, Black Pepper Pasta and Brown Butter on dinner menu are not to be missed. (Ditch the kids, put the Uber on speed-tap and check out the craft cocktails for a Happy Hour date night or girlfriend gabfest!) A new study has found that a diet-attainable level of Sulforaphane, derived from broccoli sprouts, was shown to counteract many of the same biochemical and molecular ab- normalities associated with ASD. What does this mean? Male participants ranging from early teens to young adult were noted to have significant behavioral improvements, with the parents of 13 subjects noting their children exhibited "striking changes which included looking others in the eye and shaking hands for the first time". [AutismSpeaks.org] • 46% had significant improvements in social interaction. • 42% percent had significant improvements in verbal com- munication. • 54% had substantial decreases in abnormal behaviors. Within the first four weeks, most began showing improve- ments in irritability, lethargy, repetitive movements, unusual mannerisms, hyperactivity, awareness and communication. Im- provement continued throughout the study. Four weeks after the treatment stopped, evaluations showed autism symptoms returning to pre-treatment levels. How can you serve your little sprouts their sprouts? Add post-cooking to a stir- fry or pasta, mix into cold noodle dishes, tuck into sandwiches and salads or if the resistance to all things green is strong, sneak into a smoothie and they'll never know. Where can you find it? Urban Produce, a 16-acre indoor vertical organic farm in Irvine, grows micro broccoli (broccoli sprouts) which can be found in grocery stores through- out Orange County including Vons, Albertsons, Ralphs, Pavil- lions, & more. www.urbanpro- duce.com Another Reason to Eat Your Broccoli
