70  /  the tasting panel  /  august 2016 SUMMER SIPS I n France, very few regions other than Provence focus on rosé. In fact, more rosé is consumed in France than white wine—they consume it with, among other things, cheese and charcuterie all year round. With minimal skin contact, the wine picks up a slight pink hue in addition to just a tingle of tannin. Although Grenache dominates the blends, the accompanying varieties, as well as the terroir and nearby flora and fauna, make for many differing and delightful expressions of Provence rosé. The Tasting Panel's editorial team—Editorial Director Meridith May; Deputy Editor Allyson Gorsuch and Wine Editor Jessie "JABS" Birschbach—recently received a surprisingly large sampling of Côtes de Provence rosé . . . so much so, that we decided to share our favorites with you. While we are moving into the dog days of summer and soon, fall buying season, we thought we'd make it even stronger of a point to not underestimate the food-friendly, perennial pairing abilities of this category. In fact, looking forward, one of our favorite matches is turkey and a dry, floral rosé.
