Each of the three expres- sions, which were produced to show off the terroir of the apples, are produced in small batches and come in cork-stoppered 750-ml. bottles. Made from Italian culinary apples—Braeburn, Fuji, Granny Smith and Gala—along with French bittersweet apples—Amère de Berthecourt, Beden, Médaille d'Or, Michelin and Binet Rouge— The Muse balances its slightly sweet nature with acidity and a dry fin- ish. Aged in French oak, layers of vanilla and clove shine through on the palate. ANGRY ORCHARD CIDER COMPANY To the Core Tilted Shed Ciderworks owners and founders Scott Heath & Ellen Cavalli began producing cider as a hobby on their farm in Northern New Mexico in 2007; they moved their operation to Sonoma County in 2011. Blending 50% organic Sonoma County–grown Gravensteins with 50% organic Sonoma County– grown heirloom apple varieties and traditional cider apples—including French bittersweets—the 2014 Graviva! Semi-Dry Cider has an earthy base that builds a foundation for layers of overripe apple, lemon and apricot. Fitting into the landscape of the wine-focused Russian River Valley, this expression ends with a kick of tannins. TILTED SHED CIDERWORKS Ramblin' Can With its numerous advantages, the can has certainly taken over the craft beer movement.
