Szent Tamás 2012 Szent Tamás Furmint: Apricot, nectarine, jasmine, chamomile and toast on the nose become pineapple, peach, cinnamon with a kiss of wood on the palate—the intense acidity braces the slight sweet- ness, translating to a rich mouthfeel. Szent Tamás 2013 Dongo Szamorodni: Luscious—poached peaches, dried apricots, marmalade and honeysuckle morph into blueberries, white chocolate and crème caramel; a sweet nose but balancing acidity made this wine just perfect with our blueberry madeleine dessert, although we could easily have sipped this nectar all on its own. Dry Furmint On-Premise in Los Angeles Our editorial team dined at the trendy Baltaire Restaurant in the Brentwood neigh- borhood of Los Angeles with Károly Kovács, owner of Szent Tamás Vineyards and Winery near the town of Mád in the historic region of Tokaj, Hungary, to explore single vineyard expressions of the Furmint grape variety. While dry Furmint is making its way onto U.S. dining tables, slightly sweet desserts like this blueberry madeleine with lemon curd pair beautifully with sweet Tokaji expressions at Baltaire in Los Angeles. A chicken panzanella salad at Baltaire restaurant in Los Angeles's Brentwood neighborhood is a lively and bright match for MÁD Furmint. MÁD 2015 Furmint: A nose of guava and kiwi with lime zest, acacia and wet gravel yields a more savory palate with tart yellow apple, daisies, lentils and celery salt; this is a crisp, lean wine, interesting and food- friendly yet quaffable.
