PalePerfection Beat the Heat with A good summer white is sunshine in a bottle with the brilliant, drip-down- your-chin succulence of freshly picked fruit. But such juice can also be sunshine's foil, capable of turning back dazzling heat with the cut of coolness, the quenching prickle of acidity and the bite of a perfect finish. While such duality often requires little or no oak, the resulting flavors can lead in just about any direction, whether bold and forward or glancing and oblique. So is the bottle in your hand one that's best served from a blanket set on turf with the sun high in the sky and suitable snacks nestled nearby? Then it's probably a perfect summer white.
