DEPARTMENT HEADER Cocktails in Copenhagen ON A VISIT TO THE CAPITAL WITH PURITY VODKA, WE TOUR A SELECTION OF SOME OF THE BEST BARS IN DENMARK by Camper English F A cucumber and cilantro drink with Purity Vodka at restaurant Geranium. or a city with a little over a million inhabitants in its urban center, Copenhagen has an outsized number of world-class cocktail bars. Purity is a well- respected vodka brand there and is distilled not far away, at Ellinge Castle in Sweden. Salon 39 is many things in one bar: a neighborhood hangout, an after-work bar, and a restaurant that also serves a combination of classic cocktails and others made with innovative techniques. We began our evening with a cocktail bridging the vintage and modern eras, a version of a Vodka Sour containing Purity, lime, sugar, orange flower water and ginger, served in teacups. Bartenders at Salon 39 make their own bitters (their eucalyptus bitters were seen at many other bars around town), a few beers and even blend their own rye whis- key. They serve an aged Negroni (aged with wood chips rather than in a barrel), and instead of offering tasting flights with three versions of the same spirit, they pair a benchmark spirit (often from a vintage bottle) with modern incarnations of the same style.
