S imon Pozi has come a long way—literally—from run- ning the Cheese Outlet Fresh Market in Burlington, VT. True, the specialty cheese and wine store's sales tripled in the ten years Pozi ran it, and his knowledge of operating a business as well as his vinous expertise matured greatly—but most of all, that gig gave him the know-how to bring life back to a long-standing venue. With its brick-and-mortar setting along cobblestone streets with a Western cowboy-town ambiance, Calabasas is an upscale community where Gaetano's Italian eatery once prospered. "Knowing that Gaetano's had been around for 25 years gave me the impetus to work with property manager Sid Liebovitch to bring it back to life," Pozi tells THE TASTING PANEL. With two children off to college and his evenings freed up, Pozi took the challenge to make necessary changes to a fl oundering on-premise landmark. "I injected energy, enthusiasm and talent. We're lucky to have people here who are on top of their game," Pozi explains. Included in that top-notch team is bartender Tait Smith, who whipped up a fi rst-class Negroni for us. "I always say, if you come to my house, I would host you with conversation and something special to drink," Smith gestures with a bow. "Unfortunately at the restaurant, you have to pay for that hospitality." In Old Town Calabasas, the wait was worth it for Simon Pozi and the new faces of Gaetano's.
