T:3.875" Here are Ferris's notes on five wines that he believes fit the bill: Château de Coulaine 2010 Chinon "Bonnaventure," France Chinon is 100% Cabernet Franc from the Loire Valley. Subtle and supple notes of red raspberry, cherry and slight red currant notes. Has the leanness and minerality I associate with oceanic qualities of seafood and fish. Pair with a heartier white fish. MICHAEL SKURNIK WINES Height: 7-1/2" Domaine Saint Gayan 2009 Rasteau Côtes du Rhône Villages, France Grenache, with Mourvèdre and Syrah. Red cherry, red raspberry, subtle hints of blackberry and blueberry, but also some interesting herbal and spice notes: lavender, black pepper, white pepper, rosemary and thyme. Pair with leaner fish, such as striped bass. MICHAEL SKURNIK WINES Cognac Glass Viña Alberdi 2006 Rioja Reserva, Spain One of the signature notes of Rioja wines is dill. When you combine dill with cherry and raspberry components—and remember that you find notes of dill in fish and shellfish—it's a natural. Herbal essence sets the pairing off. Body weight is appropriate; acids and tannins are moderate, alcohol is well controlled. Pair with classic shellfish dishes, crab, lobster and shrimp. MICHAEL SKURNIK WINES Scarzello 2008 Barbera d'Alba Superiore, Italy Barbera is great wine for seafood; I adore this style. Fennel is a subtle note in fish and shellfish; fennel stick is planted throughout Piedmont, and you find hint of fennel in the wines. A wine like this has the right amount of body weight, acidic structure, subtle flavors. Pair with mussels or braised white fish. VIGNAIOLI SELECTION Viticoltori de Conciliis 2010 Donnaluna Cilento Aglianicom, Italy Aglianico is the signature red grape of Campania, where seafood is omnipresent in the cuisine. It exhibits red tart fruit, fennel, anise and other wild herbs—ideal to pair with rustic, tomato-based, even spicy dishes. I tend to decant this one and let it sit for 20 to 25 minutes. It blossoms, and the bouquet is wonderful. Pair with cioppino (fish stew) and other heartier stews.
