Tequila REVOLUCION Organic Silver T he fact is you can make bad wine from great grapes, but you can't make great wine from bad grapes. The same holds true for tequila—in a way. All things being equal, the higher quality the agaves, the better the tequila. Today a great deal of attention and scrutiny are being devoted to cultivating agaves organically—without the use of noxious chemicals, fertilizers and other foreign agents that eventually make their way into the agaves through the soil. Tequila REVOLUCION 100% Agave Tequila has embarked on the road less traveled and has just debuted its first 100% organic tequila. REVOLUCION Silver 100% Agave Tequila is distilled exclusively using mature, USDA and EU certified organic agaves grown in the mineral rich soil of its plantation in Tecolotlán, in the Lowlands of the state of Jalisco. The process of crafting the tequila begins with carefully selecting the individual agaves that have reached their optimum sugar content. The harvested agaves are taken to at Fábrica Tequila Cascahuín in the town of El Arenal, Jalisco. There the agaves are slowly roasted in a masonry oven, pressed twice and fermented naturally with airborne yeast. Master Tequilero Salvador Rosales Torres then distills the fermented mash—called mosto—in the distillery's copper pot stills. Only the heart of each distillation run is used in bottling. The distillery uses 100% natural yeast to ferment the must, avoiding synthetic accelerators, and prefers the preventive methods over the corrective ones (such as pesticides, etc.) when dealing with storage issues. Every step in the process is done without the use of solvents and cleaning products prohibited under certification guidelines; all cleaning products must be organic. "Our choices have always been determined by the absolute compromise towards preserving, as pristine as possible, the true agave flavor in all tequilas we craft," says Juan Carlos Arav, founder and president of Tequila Revolucion. "This is why we chose to go organic, after more than 17 years of perfecting the art of making tequila, we found ourselves in the need to go even further; we know we already make outstanding tequila, but given the standard of purity of organic farming and production, it only made sense to us to embrace this philosophy, and create even purer tequila, true to the plants it pays homage, and true to the soil that nurtures them." The 80-proof Tequila REVOLUCION Silver is rested for up to two months in specially designed proprietary containers to allow its constituent flavors to fully integrate. The finished tequila has a citrus and floral nose with caramel notes.
