Sonnalta—Gaelic for “generous”—is extra-matured or fi nished for two years in Spanish Pedro Ximenez sherry casks that impart aromas of dark chocolate, raisins, toffee and baking spices to the complex, malty fl avors of a select ten-year old mark drawn from the company’s private collec- tion. Sonnalta PX is Glenmorangie’s second sherry-fi nished whisky (it also produces Lasanta, which is extra-matured in oloroso casks) and the fi rst in a succession of annual releases planned for its Private Collection. “The majority of single malt whisky is strong and oily; W it’s not well-suited to being fi nished,” says Lumsden. “For Sonnalta PX, we’re starting with a cleaner, unpeated spirit that has spent ten years in heavily charred American oak bourbon barrels and is ideally suited to taking on the rich, complex fl avors of PX and spicy Spanish oak.
