98  /  the tasting panel  /  december 2016 ARTISANAL SPIRITS L ike many high-minded ideas, Corbin Cash Spirits started in a garage. In 2007, David Souza, founder and Master Distiller of Corbin Cash, began distilling spirits out of his garage and it wasn't until two years later that an actual distillery was built in Atwater, California. However, Corbin Cash's story starts much further back. Souza's family has owned farmland in California's San Joaquin Valley for almost 100 years. Of the 2,000 acres, 1,000 of those were planted to sweet potatoes (the actual variety is a closely held trade secret). It was this plot of sweet potatoes that gave Souza the idea of a sweet potato–based spirit. Three generations of the Souza family: David P. Souza, his son, David J.
