SPEED TASTING REPORT BEHIND BARS THE SANGRIA: "Jailers Southern Peach" THE BRAND: Jailers Premium Tennessee Whiskey (Capital Brands LLC/Tennessee Spirits Co.) Mixologist ◗ 1 oz. Jailers Premium Tennessee Whiskey ◗ ½ oz. lime juice ◗ ½ oz. clementine juice ◗ 1½ oz. reduction of Spanish dessert wine ◗ Frozen purée of peaches steeped in ras el hanout (a Moroccan spice mix of orange peel, lavender, allspice and cinnamon) ◗ Top with cava and garnish with lime. The launch of Jailers ushers in a new spirit celebration that begins with aged, 86-proof Tennessee whiskey, chill- filtered for exceptional clarity and taste and a polished finish. Michael Mina SF bartender Jennifer Russick played on the brand's Southern theme and brought out the fruity notes of this aromatic whiskey with the use of a dessert wine and a peach purée frozen into a block. THE SIP: "The balance of tangy fruit and spice in a lushly textured cocktail was lovely; the vanilla and whiskey notes were a pure treat." —Anthony Dias Blue "Jailers is a clean, young whiskey with just the right base for the peach and dessert wine to interact." —Ted Carmon Summer-Jane Bell of The New Easy in Oakland, CA. PRETTY POWER THE SANGRIA: "Rebel Diva" THE BRAND: Tequila REVOLUCION ◗ 1 oz. Tequila REVOLUCION 100 Proof ◗ 1½ oz. Dry Riesling ◗ 1/4 oz. Pür Likör Blossom Elderflower Liqueur ◗ 1 oz. grapefruit juice ◗ ½ oz. lemon juice ◗ ½ oz. pink peppercorn syrup ◗ Garnish with grapefruit peel and thin lemon wheels. Pink peppercorn syrup provides the glittery pink specks. Small-batch Tequila REVOLUCION (see our story on page 5) has a powerfully pronounced agave nose. The 100-proof Lowlands Blanco in the racecar-blue bottle packs two pistols on the label, paying homage to the Mexican Revolution 200 years ago. The package inspired Oakland mixologist Summer-Jane Bell to create this citrus-peppered punch that, when batched ahead, is an easy server for a crowd at the bar. The SIP: "Pretty, with an edge! The drink does not disguise the wonderful agave flavor, and the citrus notes are good and spicy." —Bridget Albert Jennifer Russick is a bartender at Michael Mina in San Francisco. 108 / the tasting panel / may 2012 "The savory pink peppercorns complement the wine and the tequila—they actually brighten the agave with a floral finish." —Trudy Thomas
