The Neat concept is also a perfect fi t for the 123 Tequila experience as well, which Ravandi describes as a Vuelo de Agave, or fl ight of agave, meaning that these tequilas provide a perfect course in Agave 101; by tasting all three neat in a fl ight, one may experience tequila in its purest form. Demarest comments: "You're trying these each sepa- rately, so you're getting the fl avor, you're appreciating that—and if you're spending the money on a premium spirit like this, you're getting to experience it at its best . . . and you cleanse your palate or soften your palate to taste more!" The Neat Challenge We challenged Demarest to create a Neat-style chaser for each of the 123 expressions. Here's what this mixol- ogy master made us, simple, sweet and Neat: UNO: "It's a crisp Blanco with a nice character and a nice little bit to it, so I wanted to go somewhere a little spicy, so I added some chipotle! It's basically a Michelada, with a little citrus, Negra Modelo and a bit of chipotle spice. You get to taste the spirit, and then you get the bubbles and spice." DOS: "It's a beautiful Reposado tequila, and it has a smoother tone, so for me, it's perfect for winter, so we did a little cinnamon, and agave nectar and lemon, and the agave nectar adds a little sweetness that's soft, and sort of like pancakes." TRES: "I love the Añejo because it just has a full-bodied fl avor, so again we did lemon, but I softened it with a little ginger vanilla syrup so that it kicks it up a notch." M Y CM MY CY CMY K
