84 { THE SOMM JOURNAL } OCTOBER/NOVEMBER 2014 { by design } FROM HONG KONG TO NEW YORK, LONDON TO LOS ANGELES, many of the world's swanki- est lounges have a common denominator: the design wizardry of Jeffrey Beers. His vision is behind the bricks and mortar of many hospitality heavyweights, including Jean-Georges Vongerichten, Fontainebleau Hotels and Four Seasons Hotel and Resort. Other examples include multiple projects for Daniel Boulud Dinex Group, for whom Jeffrey Beers International just renovated New York's db Bistro Moderne, modifying it from the original property he designed ten years ago. What was the biggest change to the flagship space? The restaurant's very first bar. "Daniel felt it was time to reinvent the restaurant because the fashion back then in NYC was to not have a bar—you'd have a service bar and drinks would be served, but there would not be a bar proper," says Beers. "The new bar is very warm and feels very New York." Putting himself in the mind of the guest is an important part of Beers' creative process. He says he'll take a cocktail anytime (especially if it's an appletini or sakétini), but he really loves red wine. And it's in the spaces he designs, sipping his favorite California or Tuscan reds, that he gains inspiration.
