Pooja Mottl promises to help make healthy eating a habit in just three days with quick and easy recipes. Roasted Cumin and Tomato Raita Serves: 2–4 Prep time: 10 minutes Raita is a staple yogurt-based dish of Indian cuisine, used as a condiment or side dish and eaten with curries and biryanis. This raita is a wonderful introduction to eat- ing yogurt in a savory and spicy way as opposed to the sweet way in which we have been conditioned to eat it in America. Raita can be prepared in many forms using cucumbers, papayas, mangos, radishes, or even bananas and pomegranate arils (seeds). The basic version here requires ingre- dients you likely already have in your kitchen. 1 c plain yogurt 2 tsp whole cumin seeds (3/4 to 1 tsp ground) 1/4 to 1/2 tsp chili powder 1/2 plus 1/8 c thinly sliced red onion (sliced from root to stem) 1/2 c ripe heirloom, Roma or cherry tomatoes, small dice or thinly sliced Leaves from 8 sprigs fresh cilantro plus extra for garnish 1/8 tsp sea salt (optional) 1. Set a saucepan over medium-high heat. Add cumin seeds and pan roast for a minute or so. Remove from heat and allow to cool for another minute. Transfer seeds to a spice or coffee grinder and grind, or grind using a mortar and pestle. At this point you will have extra ground cumin (store the remainder), as you only need 3/4 to 1 teaspoon for this recipe. 2. Place all ingredients in serving bowl and stir to fully incorporate. Garnish with more cilantro. Plate and serve! Note: The keys to this recipe are pro- portion and fresh ground cumin. The right amount of spiciness from onions and spices offsets the cooling proper- ties of the yogurt and the sweetness of tomatoes. Tasting as you go is key. Although you may use ground cumin from your spice rack, this recipe tests legions better using fresh ground cum- in seeds—the aroma is magical! Strawberry Chocolate Mousse Serves: 2–4 Prep time: 5 minutes 1 avocado, seed removed, quartered 6–7 very ripe strawberries 2 tbsp plus 2 tsp raw cacao powder 6 tbsp coconut milk 2 tbsp plus 1 teaspoon whole cane sugar (Sucanat or Rapadura) Place all ingredients in a blender and blend until smooth. —Excerpted from The 3-Day Reset: Restore Your Cravings for Healthy Foods in Three Easy, Empowering Days, by Pooja Mottl.
