IRISH WHISKEY The Irish Whiskey Parade Continues . . . Michael Collins malt���almost a green apple lavor. Finally, the pot still delivers a mouthwatering oily, yet spicy, inish. When these styles are combined, the result is a smooth but complex whiskey.��� As an aside, the brand is phasing out its 10 Year Old Reserve, so you might want to stock up. Personally, I���m a fan of their 12 Year Old Special Reserve and 10 Year Old Single Malt, and many consider their Original cocktail-ready. William Grant & Sons PHOTO: RICHARD CARLETON HACKER Michael Collins 10 Year Old Single Malt Whiskey is as unique as its namesake, who helped lead the Irish Revolution for independence. This double-distilled whisky uses a combination of unpeated and peated malted spring barley, which results in a slight whiff of smoky vanilla. No wonder it won a Double Gold at the San Francisco World Spirits Competition, as well as Best Irish Whiskey. Michael Collins Irish Blend is distilled with local mountain water, aged four to ten years in ex-bourbon casks, and produced in small batches by Ireland���s last independently owned distillery. This is an easy-drinking whiskey by itself or for a mixologist looking for honey, citrus, and malt nuances in a cocktail. Sidney Frank Importing Co. Kilbeggan Just in time for St. Paddy���s Day, Ireland���s oldest continuously licensed distiller has introduced a modern new bottle design that accents its founding year of 1757. Named after the small town in which it is distilled, Kilbeggan is double-distilled, which highlights its delicate tones of almond, peaches and vanilla. ���Kilbeggan has had four generations of families as its custodians over a 256 year period,��� notes Stephen Teeling, Senior Global Marketing Manager for Irish Whiskey at Beam Inc. ���Despite halting production from 1953 to 2007, the original license was maintained, which facilitated the stills being ired again in 2007.��� Kilbeggan also uses a 180-year-old pot still on the original site of production, which gives this whiskey its unique malt lavor. Beam Inc. Tullamore D.E.W. The initials stand for Daniel E. Williams, the whiskey���s founder, but ���dew��� appropriately describes the delicate lavors in this blend, derived from the triple-distillation of all three styles of Irish whiskeys: pot still, malt and grain. ���The grain whiskey gives a sweetness that complements the honey and vanilla lavors of the bourbon casks,��� notes Tim Herlihy, Tullamore���s U.S. Brand Ambassador. ���The citrus character in Tullamore D.E.W. comes from the 96 / the tasting panel / march 2013 At restaurant Le Mistral in Studio City, CA, Bushmills Master Distiller Colum Egan displays some of the top-selling whiskeys from the world���s oldest licensed distillery. Bushmills Located on the rugged northern coast of Ireland, Bushmills is renowned for its White Label and Black Label stalwarts, as well as the recent Irish Honey. Also not to be missed are the Bushmills single malts, including the lagship 10 Year Old, plus a 16 Year Old matured in both bourbon barrels and sherry butts, then vatted and inished for six to 12 months in port pipes. Their spectacular 21 Year Old is aged in ex-bourbon barrels and Spanish oloroso sherry casks; after 20 years in oak, the whiskies are vatted and inished for two additional years in sherry casks.
