Deep historic agricultural roots nourish and support McKinney, the third fastest-growing city in America. Situated just 30 miles north of Dallas, McKinney's old-fashioned courthouse square downtown and its golf course-laden greenbelts represent the best of the old and new, and family- based farms, ranches, and restaurants like Harvest Seasonal Kitchen are celebrating McKinney's heritage. Harvest Seasonal Kitchen restaurant embraces the community-to-table ethos, working with over 42 farms and ranches and 23 local artisans and craftsmen to create a cuisine and atmosphere that caters to this thriving community. The food and drinks they devised utilize organic, local, and regional ingredients, and the ranchers and farmers provide grass-fed beef, cage-free chickens, and organic fruits and vegetables for Harvest and other local merchants. Harvest Co-Owner Rick Wells wanted his family to grow up on a farm and laid down his roots in nearby Lucas, Texas, to es- tablish Water Boy Farms. The farm supplies organic staples like lettuce, peppers, and exotic plants, including edible pansies for Harvest Seasonal Kitchen, while their beehives produce the honey. Wells, also owner of Rick's Chophouse, and his Master Gardener and Executive Chef Andrea Shackelford are the creative forces behind Harvest. Rick had an early corporate background at Bennigan's and Sambuca's concept restaurants, bringing an understanding of the elements of brand and site. Shackelford studied at Southern Methodist University but honed her culinary skills at Tom Colicchio's restaurant, Craft Dallas, modeled on LONE STAR STATE square in in the the and support miles north its golf family- family es- peppers, while their At Harvest, smoky pork enchiladas are served with queso fresco and tomatillo sauce.
