"I chilled all the wines and lined them up to taste," offers Pitts. "I tasted them before I tasted the proteins. The wines are crisp and refined with refreshing acidity. It was an exciting task to come up with pairing ideas." Summer melons and prosciutto works beautifully with Jidvei Gewürztraminer and Jidvei Premiat Dry Riesling. Lulu McAllister of NOPA and Liholiho Yacht Club in San Francisco notes the balance of salinity and fruit in Jidvei's Ana Chardonnay and the Alsace style of Maria Pinot Gris. "It's a palate-cleanser." Wine Director Tonya Pitts at One Market was our host for the event. Chef Mark Dommen of One Market works with eight separate seafood purveyors, including fish caught daily by local fisherman. Here, Jidvei's Ana Chardonnay and Maria Pinot Gris are paired with olive oil-poached halibut with piperade and green olive.
