Four Seasons Chef Produces His Own I n a world where mix- ologists are increasingly venturing into the kitchen to design their own bitters and custom blends, Boston Four Seasons Executive Chef Brooke Vosika has reversed the direction, spending time outside the kitchen, successfully hand-crafting a half-dozen different types of wines and spirits—as well as specialty food items. When Vosika hangs out at his cabin in upstate New York, he's not sitting around relaxing. Instead, he's producing his own line of drinks, including cider, wine, beer, whiskey and even a sherry- style wine, which he makes available for special occasions at the hotel, including some fundraising events. He also creates condiments like olives and hot sauce, which he uses to enhance both the cocktails and the dishes on the Bristol Lounge menus. —B.S.E. Chef Brooke Vosika.
