Terra di Seta Winery owner and viticulturist Maria Pellegrini started farming in 2000 and in 2008 produced the only exclusively kosher Italian wines. The Chianti Classico has all the bells and whistles: red raspberry and sour cherry notes, chalky tannins and good acidity. Lotan Wiessman from Tulip Winery in North Israel's Lower Galilee talks about the Village of Hope, a com- munity that helps disabled people through jobs and services from winemaking, bottling to harvest. "We employ at least five people every day. Our winemaker, David Barilan, hugs them all the time. There is a lot of love and caring that goes into this project." Tulip 2011 "Mostly Cab Franc" is aged 12 months in French oak and blends in 15% Merlot. Black fruits and violets are the bright notes, with a juicy freshness and food-driven acidity. This is a memorable, world-class red. Or Haganuz is a small winery in Israel's Upper Galilee on the northern slopes of Mt. Meron. The elegant 2012 blend of Cabernet Sauvignon, Cab Franc, Merlot and Petit Verdot is flush with fragrance, poise and fruit. For style and elegance, Domaine du Castel is a standard for Old World tradition in their 2011 Grand Vin Bordeaux blend. From the Haute Judée, complexity of green olives and herbes de provence make you dream of pairing with rack of lamb.
