Mediterranean Fare in Scottsdale W e stopped in to the acclaimed Prado restaurant at the Montelucia Resort & Spa in Scottsdale, AZ, where we got an up-close-and-per- sonal look at the way Chef de Cusine Peter DeRuvo relies on fresh, locally- sourced ingredients to pull together some of the fi nest Mediterranean-infl u- enced fare this side of the Mississippi. “We work within the locality of ingredients we get in Scottsdale, and Arizona all over,” explains DeRuvo as he prepares a freshly-butchered, locally-sourced pig for that evening’s dishes. “We have a longer growing season here, so it’s easy to be enam- ored by our tomatoes, fava beans and broad beans.
