126  /  the tasting panel  /  april 2014 RESTAURANTS THAT MATTER T rying to choose the Restaurants That Matter in New York City is a task worthy of the labors of Hercules. Or perhaps Sisyphus. It verges on the impossible, for New York is arguably (or perhaps inarguably) the . . . busiest restaurant city in America. More new restaurants open in New York in a week than in most cities in a year. There are whole neighborhoods that are worthy of our look at Restaurants That Matter, so much is happening in former fringe 'hoods like the Lower East Side, the East Village, the Bowery—and Brooklyn is completely out of control. And there are so many places that matter—that have deeply affected how we eat in America today. From Le Bernardin, Per Se, Gramercy Tavern, Union Square Café and Daniel on the high end, to edgy joints like the various Momofukus, Blue Hill, Shake Shack, The Modern, The Breslin, John Dory, The Meatball Shop . . . and the list goes merrily on and on. Consider the following to be just the briefest snapshot of what matters right now—a pair of new destinations that are unexpected in terms of even New York's culinary history.
