You may be tempted to yell "Geronimo" after a meal at this Asian Fusion/New American—but good manners demand that really, you shouldn't. You can sense the roots of Geronimo in the Modern Southwestern cooking of Coyote Café—in dishes like the honey-glazed rock hen, the peppery elk tenderloin with applewood smoked bacon, and the chile-rubbed pork chop. But what are we to make of the hamachi and ahi salad, and the green miso sea bass? The wine list is wide, the cocktails are made from local ingredients, whenever possible.
