POTABLE BITTERS ~ IMPORTED BEER The Sicilian Swapper: Averna Amaro Sicilino Bartenders across the country are moving Averna Amaro Siciliano from the backbar to the cocktail shaker, replacing Vermouth with the Sicilian herbal elixir and creating cocktails around the legendary liqueur. "We've transformed Averna from something that was just used for an after-dinner digestif to a cocktail base," says Matthew Sharp, director of national business development for the brand's importer, Domaine Select Wine Estates. "This category is booming; the demand is out of control." Averna's bittersweet, delicate and balanced notes offer a velvety warm palate that is derived from Salvatore Averna's 1868 recipe still used today: A mix of herbs, roots and zests infused at room temperature with pure alcohol. The liqueur is bottled at 29-percent alcohol and is rock star of new age cocktails, such as the Vertigo and the Dark Manhattan. But, the fun of mixology is not following recipes. It's cracking open the bottle, taking in Averna's herbal, bitter and sweet essence. And, when we taste, we understand that some liqueurs deserve more than the back bar. Averna is one of those liqueurs.
