Dancing Goat Distillery craftsmen Travis Hasse and Nick Maas may be serious about their whiskey, but they still take time to enjoy the lighter things in life (like spending time with Hasse's dog, Bernadette). Dancing Goat Distillery Limousin Rye ($45) Dancing Goat Distillery officially opened in Cambridge, Wisconsin, with the debut of this 92-proof rye. The spirit's base distillate ages over time in vintage oak before new wood is added with a proprietary process (the whiskey finishes aging in a solera system with Limousin oak barrels). The nose is par- ticularly fragrant with honeyed notes of white flowers, deep caramel-cocoa, and green tea. The flavors bring out lovely stone fruit, including peach and apricot, which honeysuckle further sweetens. A dash of oatmeal and a hint of caraway linger on the finish.
