50  /  the tasting panel  /  september 2017 COMPETITIONS Papa's Pilar Rum Named for Ernest Hemingway's boat and inspired by his adventures out of his beloved city of Key West and beyond, Papa's Pilar Rum pays homage to the great American author, who was known to imbibe in a proper Daiquiri (or three). Aaron Joseph, Beverage Director at Baltimore's R. Bar, pointed out that rum has a distinct history in America: It was demanded at George Washington's inaugu- ration, Paul Revere was said to have stopped for a drink of it during that famous ride, U.S. sailors were given a daily ration of it until 1912, and Don the Beachcomber resurged its popularity in the 1960s with the tiki movement. Joseph's cocktail, Glee of a Nation, was inspired by the tiki tipple Missionary's Downfall. He mixed Papa's Pilar Blonde (solera blended in Bourbon barrels and Spanish Sherry casks) and Dark (aged in the same plus Port Wine casks) rums, lime and pineapple juices, tropical green tea honey syrup and peach tree leaves—then garnished the drink with peach leaves and a tropical flower––to take home the first-place prize of $1,000. 50  /  the tasting panel  /  september 2017 Glee of a Nation by Aaron Joseph, Beverage Director, R.
