Welcome to NewYork JUST ENOUGH DIRTY Michael Lombardozzi of One if By Land PHOTOS: DOUG YOUNG Horse & Carriage As its name suggests, One If By Land is a place where the downtown old guard gathers to enjoy a sense of history and a traditional cocktail. So Michael Lombardozzi harkened back to the bar's former incarnation to create his savory Martini— with just enough dirt and horseradish to evoke the bar's history as a carriage house. Karlsson's, he says, stands up because "it's a dense, earthy, starchy vodka that goes well with horseradish." —Lana Bortolot —Lana Bortolot Prepare the infusion: Infuse the vodka, using ¾ whole, fresh horseradish root for three bottles of Karlsson's Gold Vodka. Let sit for four days, and strain the horseradish. Prepare the olives: Blend together until very smooth: 4 oz. bleu cheese 9 cocktail onions 2 tbs. of smoked paprika powder Place stuffing inside a baggie, cut a tiny corner off to squeeze out the mixture into the olives. Prepare the cocktail: 4 oz. Karlsson's horseradish-infused vodka ¼ oz. or less of olive juice or brine Shake with ice. Strain in Martini glass. Add stuffed olives. LADIES' CHOICE Aaron Fitas of Yerba Buena PHOTOS: DOUG YOUNG Think of this Latin hotspot as the new Sushi Samba—without the Sex and the City girls. In the West Village outpost of the Yerba Buena chainlet, Aaron Fitas says he's inspired by the women who frequent the bar. "When I put a beautiful cocktail in front of them, they hold on to the glass like it's a new accessory," he says. "It's beautiful to watch." Fitas says Karlsson's earthiness gives balance to the fruit drinks favored by the ladies, and is also compatible with the Japanese palate he's been experimenting with. "Some people might be afraid to pair it with other ingredients, but it works here," he says. "Karlsson's stays on the menu when it calls for something interesting." Using Karlsson's Gold as the base, the foam in his Asian Sangria "is a cocktail in itself." —L.B. Asian Sangria 2 oz. Karlsson's Gold Vodka 2 oz. lychee-infused saké ¾ oz. Domaine de Canton Ginger Liqueur ½ house-made lemongrass syrup ½ yuzu juice (Japanese lemon) 2 leaves of Japanese mint Put all ingredients in a shaker with Kold-Draft 2x2 ice cubes. Pour over crushed iced in wine glass; top off with foam, made with Karlsson's Gold and fresh cucumber and honeydew melon. Garnish with a skewer of honeydew melon and watermelon.
