76  /  the tasting panel  /  may 2016 SPEED TASTING REPORT ALBINEA CANALI'S FB LAMBRUSCO DI SORBARA AND OTTOCENTONERO Banfi Brand Ambassador Luciano Castiello presented Albinea Canali's FB Lambrusco di Sorbara and Ottocentonero. Albinea Canali, established in 1936, secured a very successful partnership with seven local grape-growing families in the north Italian province of Emilia-Romagna. Castiello tells us, "The beauty of the FB [fermented in bottle] Lambrusco is that this ancestral method is the way the wine was always made and why Canali really has led the renaissance of Lambrusco." Albinea Canali FB Lambrusco, Metodo Ancestrale From vineyards located in Emilia-Romagna, this is Lambrusco di Sorbara DOC. 100% Lambrusco di Sorbara. Lambrusco di Sorbara vines grown in a Geneva double curtain are pressed after a cold 12-hour macer- ation. The wine goes through secondary fermentation in the bottle. This leaves the wine dry and with a deposit of natural yeast in the bottle. Blind Tasting Note Orange peel, red grapefruit, fresh orange juice, parmesan rind, citrus pith, bitter melon and a tart finish. —Daniel Coplen Albinea Canali Ottocentonero From vineyards located in the Emiliana-Romagna vineyard. 50% Lambrusco Salamino, 40% Lambrusco Grasparossa, 10% Lancellotta. Grapes macerated at a cooler temperature for three to four days to extract darker color. Made using the Charmat method. Blind Tasting Notes Ripe currants, blackberries, Framboise, violets and jasmine. —Caleb Hopkins FONTANA CANDIDA'S TERRE DEI GRIFI AND LUNA MATER National Director of Cru Artisan Wine Lars Leicht spoke on behalf of Mauro Merz, Head Winemaker for the pioneer winery of Frascati, Fontana Candida. Frascati was the most widespread Italian white in the world from the sixties until the early nineties. But after the boom, says Leicht, "Fontana Candida decided to make Frascati the way it should be, varietally, and historically correct. So they got rid of the international grapes and started using the older clones of the originals." Fontana Candida Terre dei Grifi Frascati Superiore Secco DOC From vineyards in Lazio, surrounding the hillsides of Rome. Most of the Frascati DOC area has potassium rich, volcanic soil. 50% Malvasia Bianca di Candia, 30% Trebbiano Toscano, 10% Greco, 10% Malvasia del Lazio. Gently pressed and vinified in temperature-controlled stainless steel. Lees contact for four months, then further aging in stainless. Blind Tasting Note Ripe apple, and pear. Evokes child- hood memories of my dad's fruit orchards. Lots of fresh aromas. —Juan Cortés Fontana Candida Luna Mater Frascati Superiore DOCG From the hillside vineyards in the Frascati DOCG zone of Lazio. Volcanic, loose, mineral rich soils. 50% Malvasia Bianca di Candia, 30% Malvasia del Lazio, 10% Bambina, 10% Greco. Hand-picked grapes; one lot cooled before pressing, the other fermented on skins in oak barrels. Hand destemmed whole grapes are added to the must from a subsequent harvest two days later. Aged in bottle in a tufaceous rock cellar. Blind Tasting Note Clotted cream, saline, cheese rind, melon and vegetal. —Linda Torres Albinea Canali FB Lambrusco.
