But Petra is actually the Sommelier at Epic Roasthouse, Pat Kuleto's stunning restaurant on San Francisco's Embarcadero waterfront. Part of the pre-opening team two years ago, Petra took over the wine program in June of 2009. "My immediate goal was to offer wines that other restaurants would not or could not." What began as a holiday promo- tion turned into one of the most successful programs at Epic: pouring a $400 dollar bottle of champagne by the glass. "My customers don't usually have the opportunity to just have a taste of Perrier Jouët Fleur de Cham- pagne Rosé [vintage 2002] by the glass," Petra notes. "I believe that we are creating memories when people will recall this experience and say, 'I remember the day I tasted this amazing Champagne at Epic.' At $80 for the six-ounce or $40 for the three-ounce pour, it's affordable . . . and glorious."
