december 2015  /  the tasting panel  /  71 POWER Hitter Dave McCabe sits at the bar of The Dead Rabbit, an eatery on New York's Lower East Side known for its innovative cocktails, and talks about the two popular Irish whiskies he represents: Powers Gold Label and Redbreast. McCabe, who normally leads classes at the Irish Whiskey Academy at Midleton outside Cork, is in the U.S. and Canada visiting customers. "Powers Gold Label is known as a spicy type of whiskey, as there are more older casks used in the blend," McCabe says. "For that reason, Powers might appeal more to people used to drinking bourbon." By contrast, McCabe says, "People who like red wines and fortified wines might find more appeal with Redbreast," aged in Sherry casks. Both whiskies are big in the cocktail scene. Dead Rabbit bartender Brooke Baker invented a drink using Powers called Slim Shady, blending the whiskey with green peppercorn tincture, lemon, peach basil syrup, Suze and Lillet Blanc. And Dead Rabbit's Jillian Vose has her favorite Redbreast cocktail, Psycho Killer, which blends the whiskey with cocoa-nib-infused Campari, Marie Brizard Chite Cacao, Giffard Banane and absinthe.
