Cariñena: Bodegas Paniza (Virgen del Aguila) Paniza Viñas Viejas Terroir: Vines of up to 100 years old are planted in slate soils above 850 meters, just outside the village of Paniza. Tasting notes: Extremely high intensity, displaying dark fruits such as mulberries, blackberries, cinnamon and hints of dry herbs. Recommended food pairings: Ideal with roasted meat, cooked tomatoes, toasted bread. Calatayud: Bodegas San Alejandro Evodia Red Terroir: The wine benefits from the Atea region's Continental climate with dry summers and cold winters. The soil is pure slate with schist, in a mountainous area with altitudes ranging from 750 to 1,000 meters. The vineyards of origin are up to 100 years old, with grapes in a Gobelet training system with natural drainage. Tasting notes: A mineral-laced, elegant wine displaying plenty of raspberry and sweet and sour cherry notes that harmonize with the minerality. Recommended food pairings: Poultry, fish and seafood, hard cheeses. Somontano: Viñas del Vero La Miranda de Secastilla Red Terroir: A Mediterranean micro-climate nourishes grapes grown in stony and sandy soils; the location and altitude of the vineyards has a high number of day- light hours which favors fruit maturation. Tasting notes: This wine is characterized by fresh aromas, along with black fruits, prunes, violets and a few soft touches of toasted oak and sweet licorice. Elegant expression on the palate, with an explo- sion of flavors contrasted with a velvety but clean finish. Recommended food pairings: Serve at 57 to 61 degrees Fahrenheit with red and roasted meats, rich fish dishes, cheeses and desserts. Campo de Borja: Bodegas Aragonesas Coto de Hayas Garnacha Centenaria Terroir: Grapes harvested from old Garnacha vines from single vineyards "Monte Alto" and "La Sarda", which have arid slate soils and are located along the slopes of the Iberian Mountain range. Tasting notes: Highly intense fruity, floral aromas give way to fine notes of spices. The mouth is smooth to start, and then opens into a harmonious, well-structured mouth and a lingering aftertaste. Recommended food pairings: Steaks and salmon, soft cheeses, tapas. Terra Alta: Clos Dalian Garnacha Blanca Terroir: Terra Alta, a wine production area for nearly 1,000 years, is an ideal place for Garnacha Blanca, affected by local winds ("Cerc" and "Garbi") which help the grapes' maturation process on irregular terraces with calcareous soil. Tasting otes: This brilliant, golden hued wine is characterized by aromas of ripe white fruits and minerals inherent in the soil. It is creamy, crisp and robust on the palate. The first variety to be picked was Pinot Noir, starting on 2 nd September, followed by Chardonnay. We began picking the other varieties in the week of 10 th September and from then on the harvest was completed slowly and in stages, finishing on 29 th October with the last Garnacha and Parraleta in our Secastilla valley vineyards. This harvest was one of the latest ever to start and one of the longest too, lasting two months. The grapes were late starting to ripen and did so slowly, due to both the temperature and the number of bunches. The process resulted in ideal phenolic maturing of the grapes in parallel with the development of the sugar levels, so as a result the 2013 wines oer a wealth of aromas as well as lovely, stable colours. This 2013 harvest is of high quality and the wines are open, expressive, fresh and aromatic, of modest alcohol levels and easy to drink. It is interesting to note that the analytic parameters point to the wines being suitable for laying down. VINEYARD The vineyards in the Secatilla Valley are in the extreme north east of Somontano, with a special Mediterranean micro-climate. Viñas del Vero cultivates 48 hectares of vineyard in this Valley, principally Garnacha with Parraleta and Syrah. The altitude and unique orientation of these vineyards means that they receive a high number of sun hours which favours fruit maturation. The valley is dry and the sandy soils are quite stony. WINEMAKING The grape harvest was carried out over three stages during the month of October, starting with Syrah on the 10 th October, followed by Parraleta on the 21 st of October and finishing with Garnacha at the end of the month. These three stage of harvest were ideal for the collection of the bunches at optimum ripeness. The grapes were hand harvested and transported in small crates to help with triage of the bunches on the selection table. Following pre-fermentation maceration on the skins, the alcoholic fermentation began and lasted for 10 days at temperatures lower than 25ºC. The wine then went through malolactic. Following racking, the wines were blended and put into French oak barrels for aging over 8 months. The wines were stabilized and bottled naturally to retain the wines original characteristic. WINEMAKER'S NOTES Deep color with violet rim, elegant and attractive. Fresh aromas, black fruits, prunes, violet and some soft touches of toasted oak and sweet liquorice. Elegant expression on the palate with an explosion of flavours, velvety with a clean finish. CONTAINS SULPHITES Getting to Know the PDOs The next best thing to visiting Spain's five prime Garnacha appellations, or Protected Designations of Origin (PDOs), is to explore their terroirs by the glass and by the bottle. Here are five selections showcasing the distinctive appella- tions' respective terroirs and climates: Month. The award-winning som- melier hopes her fellow sommeliers and wine buyers will recognize that major selling points for single- varietal wines include their aston- ishing versatility and accessibility for both experienced and casual wine drinkers. Garnacha wines are food-friendly, and readily pair with a variety of dishes and cuisines; they also offer a fantastic value proposi- tion in terms of the quality both consumers and the beverage buyers will get for their price points. As Garnacha is now start- ing to come into its own as a varietal wine, and is ready to take to the world stage alongside Cabernet Sauvignon, Malbec and Chardonnay, Cavero describes it as a fascinating grape that "has many lives," expressing itself beautifully in both young wines and aged wines. "I am looking forward to American sommeliers and customers discover- ing why the Spanish love this grape so much," says Cavero. "I encourage American sommeliers to come to our Garnacha Month events in September to discover the versatil- ity of the grape, and try as many wines as they can. I feel they will be surprised about the quality of the different wines, especially with their reasonable price points. These wines have great potential to work well in the American market once somme- liers know the story behind them and can pass it to the consumers."
