DEPARTMENT HEADER B artenders have a new tool at their disposal, and Purity Vodka is helping spread the word about it. Instant infusion is a technique by which liquids (vodka, for example) can be infused with fresh ingredients in about a minute using a nitrous oxide–charged whipped cream canister. The technique was fi rst illuminated last year by Dave Arnold, Director of Culinary Technology at the French Culinary Institute. To infuse a liquid with a fl avor, one simply adds the liquid and solid ingredients to the canister, charges it with NO2 and releases it after a minute or so. The technique works because the pressure from the nitrous forces itself— and some liquid—into the porous part of the solids that are being infused. When the pressure is released, the liquid expands back out of the solids, bringing fl avor with it. Purity has taken the lead in training bartenders, distribu- tors and media on this new technique with hands-on workshops. They're using instant infusions on two specifi c styles of cocktails: H2 O cocktails, in which water is infused with fresh fl avors (described in THE TASTING PANEL's October), and instant fresh Bloody Mary Martinis. For the latter drink, Brand Ambassador/Mixologist John Pomeroy sets out fresh ingredients such as tomatoes, basil and even shrimp, allowing bartenders to make custom instant infusions into the vodka. The technique works well not just for the time saved but also for the treatment of fresh, delicate ingredients such as basil and other herbs. They don't wilt or spoil, as they sometimes can over a longer-time infusion, and impart off-fl avors into the infused liquid. Purity has demonstrated the technique in several states around the U.S., and to visitors of Ellinge Castle in Sweden, where Purity is made. Pomeroy says, "Most people love fl avored vodka but don't want to take the time to infuse it themselves, so they settle for pre-made infusions. This technique is fun and simple and allows for a more varied array of fl avor options than a person can have without buying a selection of mini bottles.
