ON-PREMISE PATTER Meet Ian Cauble F red Dame, President of the Guild of Sommeliers, has proclaimed that Ian Cauble is on his way to becoming a leader in our industry. After compet- ing with sommeliers from all over the country, Cauble was awarded the title of TOP|SOMM this past summer from the Guild. And to add to that, the Confrérie de la Chaîne des Rôtisseurs, the world's oldest gastronomic society, bestowed the honored First Place world title to Cauble after a heated competition with wine profes- sionals from around the globe. The native Californian played Wine Director, Ritz-Carlton Half Moon Bay Ian Cauble is an award- winning sommelier. NCAA tennis when he attended Sonoma State and studied international business. "I have always had my focus on food and wine, cooking, eating out and spending every dollar to enhance my sense of smell and taste," the somm admits. "But ultimately, I am addicted to the concept of terroir." Cauble's career path has included working at high- profi le venues such as The Wine Merchant in Beverly Hills, Aubergine and Le Quai restaurants in Newport Beach, Fleur de Lys in Las Vegas and Jardinière and Spruce in San Francisco. His current position as Wine Director at the Ritz- Carlton Half Moon Bay showcases his talent in the top-notch wine program at ENO, the hotel's custom-built wine tasting room overlooking the Pacifi c Ocean, as well as programs throughout the Northern California resort. Notes on Lancaster 2006 Cabernet Sauvignon, Alexander Valley The fi rst impression of the nose exhibits intense concentration and pure Cabernet aromat- ics, showing dark currants, ripe blackberry, black plum and violettes, with secondary characters of underbrush, leather, cedar and baking spices. All the aromatics are in balance with ripe fruit and earth- toned components in harmony. The palate begins with fl avors of just-ripened black fruits while quickly moving into intense earthy gravel and structure, followed by dried fl owers and new oak. The wine's structure, long length and gravelly minerality is reminiscent of a top-class Bordeaux, yet the wine still shows its California soul with its ripeness of fruit in the mix.
