From the clever lure-logo on the bottle, to the brand's commit- ment to utilizing the best of fresh, local, ingre- dients that the Pacific Northwest has to offer, Dry Fly is as rugged as a lumberjack—but one that wields its axe with scalpel-like precision. Although clearly comfortable under the vast open skies, Dry Fly is equally at home at the bar, where mixologists and consumers alike have so thoroughly fallen for the brand's charms that when 101 was released, it sold out within hours (Dry Fly Washington Wheat Vodka, Washington Dry Gin and Washington Wheat Whiskey were early ambassadors for the craft distillery). Made entirely from locally sourced ingredients, this 101-proof bourbon is three years old and was produced in extremely limited quantities, proving that this is one hot Washington woodsman. Coming next from these rugged entrepreneurs is a new whiskey made from an as-yet- unnamed and untraditional grain, and if Dry Fly's previous releases are any indication, this offering will likely fly off retailers' shelves as well. Extremely flavorful with deep vanilla, caramel and cin- namon spice with a sweet peach undercurrent that rounds everything out. The finish is long, sweet and spicy with enticing flavors that lure you back for more. DRY FLY DISTILLING december 201 1 / the tasting panel / 119
