Winemaker and CEO Elena Pozzolini tames the vigorous vines, a balancing act in soils of rock, clay and sand that results in silky, expressive wines made from Bordeaux varieties. Organic viticul- tural practices, small-tank fermentation, planned down to the parcel to capture every nuance, and every other step of the meticulous production, all done by hand, make Sette Cieli stand out. Neighbored by prestigious properties such as Ornellaia, Pozzolini is fastidious in ensuring quality and walks the vineyards tasting grape after grape, her mind constantly at work on how to bring out the most exciting flavors, style and mouthfeel in her wines. We recently tasted through the current vin- tages with Elena, finding common threads of freshness, minerality and, as she notes, low pH, making the wines extremely age-worthy.
