Bardessono Restaurant and Lounge The restaurant's farm- fresh menu continually evolves to refl ect the best locally-sourced seasonal and organic ingredients, with pairings and preparations emphasizing the height of fl avor and freshness. The menu draws from local growers, farmer's markets and the restaurant's own on- and off-site culinary gardens. The bar and lounge fea- tures an array of artisanal spirits, artfully combined with house-made syrups and juices into signature cocktails. The extensive wine list features renowned small producers from around the world and highlights many organic, sustainable and biodynamic vintners. Artisan-roasted Blue Bottle Coffee is served. Green Initiatives A 200-kilowatt solar energy system provides a signifi cant portion of Bardessono's energy needs. Interior spaces and domestic water are heated and cooled by a ground-source heat-pump system. Low- fl ow fi xtures, drought-resistant landscaping and drip irrigation systems minimize water usage. All kitchen and garden vegetable and plant waste is composted. Bardessono restaurant uses locally- sourced, organic products whenever possible and is collaborating with local gardeners on the cultivation of produce and herbs, as well as maintaining its own culinary garden.
