42  /  the tasting panel  /  october 2014 NEW AND NOTABLE S weetness, on its own, is fine and good—pleasant to the palate and a truly international crowd pleaser. Your sweet-sensing tastebuds get their fair share of sweet happiness in many a cocktail. But sweet truly sings most, well, sweetly, when balanced against an opposing flavor. Sweet meets savory? Oh, yeah! Sweet and sour? Sign us up! But of all the flavor combos out there, we've got a special place in our hearts for the tongue-tingling effects of the almighty sweet-and-spicy, so imagine our joy when we heard of the newest release from Patrón Tequila, which will have your tastebuds downright twinkling. Among the agave-faithful, Patrón XO Cafe and Patrón XO Cafe Dark Cocoa have long been stalwart staples for those looking for a premium tequila-based liqueur. But now, Patrón is setting the category on fire with its new release, Patrón XO Cafe Incendio, which combines the spicy flavor of Mexican árbol chiles with noble Mexican Criollo variety chocolate—not to mention the smooth flavor of Patrón Silver Tequila. Known for a smoky-spice flavor, the árbol chile gives Patrón XO Cafe Incendio an intense heat, which is quickly cooled by the rich chocolate and crisp, fresh agave flavor. "Consumer research has proven that people want high-quality liqueurs with more heat and more interesting flavor combinations," says Ed Brown, President and CEO of Patrón Spirits, "so we're innovating the liqueur and shot category with Patrón XO Cafe Incendio." Brown adds that the word "incendio" is Spanish for "fire," and if Patrón's track record of spirit superstars is any indicator, we think this product will ignite backbars and retail shelves with its unique flavor combination. Ideal as a shot or in a cocktail, this 60-proof liqueur will have your customers clamoring for more caliente, so be bold and bring the heat!
