86  /  the tasting panel  /  april 2014 T he PRCC, or Paso Robles CAB Collective (CAB stands for "Cabernet and Bordeaux") aims to achieve two important goals: first, to bring atten- tion to the quality Cabernet Sauvignon and Bordeaux varietal blends produced in Paso, and second, to connect local growers and vintners to foster a "rising tide raises all boats" mentality. When most consumers and industry buffs think of Paso, they often think of Rhône varietals and blends. The fact is, more than half of Paso's vineyards (roughly 55 percent) are planted to Bordeaux varieties, with Rhône plantings totaling just 17 percent.
