Fred Dame: Adem, the last time I saw you was in New York City at Del Frisco's Double Eagle Steakhouse. What a great surprise to see you're working on your tan here in Santa Monica! Adem Sash: I have been with Del Frisco's for six years. The New York Double Eagle, The Dallas Double Eagle & Grille and now here at the Santa Monica Del Frisco's Grille. Fred: We're tasting two wines today, Pio Cesare's 2012 Cortese di Gavi and Ed Sbragia's 2009 Gino's Vineyard Zinfandel from Dry Creek. It's the beginning of winter, but I wouldn't know it here in Santa Monica. I love Gavi for its elegance and unique flavor qualities. And for Del Frisco's steak, it would be hard to beat one of Ed's classic Zinfandel's. Adem: Pio Boffa's Gavi works here wonderfully. It's not like a New York winter. We still get those sunny days and Gavi is perfect wine for our location and our menu. For me the Sbragia Zinfandel is a Dry Creek classic—its deep rich color, that wonderful peppery nose with its 32  /  the tasting panel  /  december 2013 TP1213_001-33.indd 32 11/22/13 8:38 PM
