2010 FOPPIANO VINEYARDS 2008 Pinot Noir, Estate, Russian River Valley ($25) Best Comeback Story BARSOL PISCO PRIMERO, PERU ($25) Pisco is staging a major comeback, and we’re glad BarSol is here for our gradua- tion. Tradition and a dedication to artisanal methodology reigns with this pisco brand, made from the first pressing of 100% single-variety grapes. Following the time-honored pot distillation methods that have dictated pisco production in Peru for centuries, BarSol is created to bottle proof; neither water nor any other additional ingredients are added to a spirit that’s perfectly untouched. The result is a highly natural spirit that adds intrigue to exotic, Latin-style cocktails, and which will continue to propel Peru’s favorite category onto drink menus and into cocktails stateside well past graduation. From 100% Quebranta grapes, BarSol emits a subtle nose that ranges from dried figs and dates to dark chocolate. On the nicely-rounded palate, heady notes of cinnamon, apricot and baked apple lead pleasurably to the long finish. BARSOL USA LLC Blended Pisco Sour 2 ounces BarSol Pisco Primero Juice of 1/2 lime 2 tablespoons granulated sugar 2 tablespoons egg white ¼ cup crushed ice 3–4 drops Angostura bitters Add the lime juice and sugar to a blender and stir to dissolve the sugar. Add the pisco, egg white and ice; blend for 30 seconds. Pour into a tall glass and add a few drops of bitters on top. 38 / the tasting panel / december 2010 JOHN TYLER WINES 2006 Pinot Noir, Bacigalupi Vineyard, Russian River Valley ($46) JORDAN 2006 Cabernet Sauvignon, Alexander Valley ($52) JOSEPH DROUHIN 2008 Chablis Grand Cru Le Clos, France ($84) DREYFUS ASHBY LANE TANNER 2007 Pinot Noir, Julia’s Vineyard, Santa Maria Valley ($36) LE MACCHIOLE 2004 Paleo Rosso, Toscana, Italy ($120) DOMAINE SELECT FOXEN 2008 Pinot Noir, Julia’s Vineyard, Santa Maria Valley ($56) FRANK FAMILY 2006 Red Wine, Winston Hill Vineyard, Napa Valley ($150) FRAZIER WINERY 2006 Cabernet Sauvignon, Memento, Napa Valley ($115) FREESTONE 2007 Pinot Noir, Pastorale Vineyard, Sonoma Coast ($100) GEORGES DUBOEUF 2009 Juliénas Château des Capitans, France ($17) W.
