"From Napa wines to San Diego beers, and everything in between, On the Thirty stands for everything California." With a bounty of Golden State goodness at his fingertips, Sommelier John Ethridge has plenty to choose from. "From a beverage perspective, I couldn't ask for anything more from California's boutique wine producers and craft beers," he says. "And when we say California, we mean all of California, from coast to coast, and this gives me a great opportunity to introduce guests to some of the lesser-known AVAs in the state." With the wine and beer clearly covered, Etheridge works closely with co-owner/Executive Chef Justin Urich to complete the California experience with a variety of fantastic thin-crust pizzas, pressed sandwiches and classic salads. "All of our pizzas here use fresh yeast, and I ferment the dough for a minimum of 16 hours before we cook it," divulges Urich. "It gives the dough this very special wine-y, sourdough-y lavor." While the 1930s hand-crank meat slicer and charcuterie station in the front of the restaurant are eye-catching (and dare we say, bursting with meaty deliciousness), as soon as Urich walks out carrying one of these piping-hot pizza pies, mouths water and eyes follow the wooden cutting board enviously. "People go crazy for these pizzas," laughs Urich, who explains that the restaurant's signature On the Thirty pizza is a top-seller. "It has spicy sopressata, a little marinara, mozzarella, fresh bruschetta, wild mushroom and a little bit of polenta on it," he says, slightly devilishly.
