Ready to move on from Cincinnati, Lammi joined the opening team at The Cosmopolitan of Las Vegas. Here, he is responsible for bringing all wines onto the property, as well as liaising with warehouses, vendors and the resort���s many restaurants. ���The wine and beverage programs throughout The Cosmopolitan are unique on The Strip, and I am proud to have been a part of their creation and ongoing evolution,��� says Lammi. ���Polished without pretense is the way that The Cosmopolitan approaches hospitality, and it���s also the way that I approach wine. I love to have fun with it, and enjoy conveying that to our guests.��� Lammi has implemented some atypical food and wine pairings at various restaurants throughout the property, which he says the chefs truly embrace. He cited a recent pairing of a Viognier with blackened shrimp and Fruity Pebbles cereal as a case in point. In addition, he has arranged a monthly dinner with Las Vegas oenophiles, during which approximately 35 enthusiasts convene at The Cosmopolitan to discuss various vintages, wineries and AVAs with him. His wine expertise is evident throughout The Cosmopolitan in other ways as well. He created the wine lists for the hotel���s bars and lounges, including The Henry, Wicked Spoon, Book & Stage, Vesper Bar, BOND, Queue Bar, High Limit, Overlook Grill, The Chandelier and Casino loor (at several of which he has incorporated Vinturi���s aerators). He also selects and orders the wine at The Cosmopolitan of Las Vegas��� retail location, EATDRINK, in addition to running all the wine tastings and events property-wide. Last November, Lammi helped open The Talon Club, a high-end lounge complete with high-limit Baccarat, Roulette and Blackjack tables, a private wine cellar, custom cocktails and an exceptional menu. ���I had a great time choosing the wines for The Talon Club,��� says Lammi. ���I���ve included some Screaming Eagle, older vintage Bordeaux, and am proud to have in the club���s cellar the world���s oldest bottle of port, a Ferreira from 1815. It���s known as the Waterloo Vintage and comes from St. James���s Palace in London.��� On The Aer With Vinturi ���Vinturi���s aerators are excellent tools if used correctly, says Lammi. He ��� explained that this means carefully selecting wines that will reap the most beneit from aeration. He was irst introduced to a Vinturi aerator by a friend, and was pleasantly surprised by the results. ���We were drinking an ���05 Ch��teau d���Armailhac Bordeaux, and after using the Vinturi Red Wine Aerator I noticed a signiicant change. The wine���s tannins were softened, the fruit and aromatics really shone through and the wine became more approachable in general. ��� Lammi has Vinturi���s Red Wine, White Wine and Spirit aerators on location at The Cosmopolitan, though he says his focus remains on the Red aerator. Currently, Vinturi���s Red Wine Aerator is in use at The Henry, The Talon Club, Estiatorio Milos, and STK. The aerators are also sold at the resort���s retail store, EATDRINK.
