I look around and I don't see one dragon or one lantern. What's going on here? George Chen: In America, Chinese food has been a staple for over a hundred years. I think there are more Chinese restaurants than McDonald's and there is a stereotype to the décor and cuisine. I wanted to change that and especially prove that fine wine and spirits are a great match to the multitude of dishes. You have a great wine list here and sommeliers—also, an artisan cocktail menu. George: The flavors and variations in Chinese food is almost unlimited. There are so many opportunities for pairing and experimentation that we wanted to make available.
