So we knew we were in good hands asking Sara Hill, Manager of Cheese Education and Training for the Wisconsin Milk Marketing Board, to pair some of our favorite new beers with some tasty Wisconsin cheeses. After all, she has worked in the specialty food and cheese industry for over 32 years, with a focus on American artisan cheese for the last 15 years, and was inducted into France's Guilde Internationale des Fromagers. Somewhere between a stout and an IPA, this dark strong ale—a collaborative effort by California's 21st Amendment Brewery, Stone Brewing Company and Firestone Walker—uses dried Mission figs, pink pep- percorns, fennel and chia seeds to create a complex mix of herbal and spice notes on the palate. To balance this bold beer, serve it alongside Sartori Pastoral Blend, a relaxed cheese made from both cow and sheep milk and hand-dusted with paprika. The sweet and smoky finish perfectly accompanies the fruity nature of the brew. Aged in bourbon barrels from the High West Distillery in Park City, UT, High West-ified Imperial Coffee Stout from Lagunitas Brewing Company in Northern California is brewed with Spice Island coffee beans from Chicago's Metropolis Coffee Company. Steeped with rich notes of dark fruit and caramel as well as a smooth coffee finish, this beer works beautifully with Ewe Calf to be Kidding from Hook's Cheese. As the name implies, the cheese blends cow and goat milk into a tangy and nutty medium-intense blue cheese, which enhances roasted malt notes while adding contrast to the sweetness of High West-ified.
