106  /  the tasting panel  /  october 2016 An interesting international concept is pleasing its patrons in Nashville, TN. Jennifer Fuller, Bar Manager of Chauhan Ale & Masala House, focuses her beverage program on marrying cocktails and wines to the unique Indian-spice influenced Southern cuisine. "In bringing in wines, I try to pick something you don't see very often. I like to have a good arrangement of bodies and weights," shares Fuller, who has been with the restaurant since its inception in November 2014. "My favorite wines have a hint of sweetness to complement the spice, although I still like big, bold reds with heavier meat dishes." As for her favorite cocktail, it's currently the Ol' Chauhan: Old Forester Signature 100 Proof Bourbon, Averna Amaro, cardamom-clove-Coca-Cola syrup and spiced cherry bitters. "The Coca-Cola syrup is made in house with green cardamom and fresh clove for that key spice. I didn't create it, but it is my favorite," admits Fuller. Cookbook author, TV personality and restaurateur Chef Maneet Chauhan's combination of Indian spices and Southern food has garnered nothing but praise in Nashville. Fuller enjoys the challenge of a constantly evolving beverage program and feels fortunate for her restaurant family. TAKING INVENTORY WITH . . . I love the constant chal- lenge—every day, every shift is different. I like meeting people from all across the world. We see a lot of tourists here. Camaraderie with other bartenders is pretty special. Eating and drinking, of course! The restaurant family—you go through ups and downs and highs and lows, and you become a family. I cannot stand a dirty bar. Not being acknowledged as a human being. At least say, "Hi." Eating out of the garnish tray—it's not a buffet. Ordering a specialty cocktail from another bar. I can try, but I won't be able to make it perfectly. We have our own specialty cocktails that I can make perfectly. When it's busy, a server doesn't speed anything up by wasting their breath in telling me what they just ordered. I have the ticket.
