And who should be there to greet us? One of the legends of the city, Joe Betz him- self. Joe began at the famed Blue Fox and then went to renowned La Bourgogne. What a great pleasure to catch up with him. Steven Betz: He is always here to work with us, as he has been since we assumed ownership in the early 1980s. The restaurant was estab- lished in 1949.
