Add smacked mint and remainder of ingredients. Shake and fine-strain into lightly salted Martini glass. Garnish with a red bell pepper slice. The perfect embodiment of the classic London dry style of gin, Broker's Gin has deep roots in England: It is produced at a distillery located near Birmingham that has two centuries of distilling and brewing on its resumé, and the gin's recipe is just as old. Ten botanicals from around the world—juniper berries from Macedonia; coriander seed from Bulgaria; orris root from Italy; nutmeg from India; cassia bark from Indonesia; cinnamon from the Seychelles; licorice from Italy; orange peel and lemon peel from Spain; and angelica root from Poland—come together during distillation to create this traditional gin. Our hat's off to creators Martin and Andy Dawson! Tasting Notes: "This classic London dry gin will go great with citrus in drinks like Gimlets and Pegu Clubs. This cocktail is an herb garden with the celery and black pepper aromas dominating the nose. Drink with the savory tones of a Bloody Mary." —Erik Adams "Strong juniper and bitter roots on the nose. Nice dryness and botanical notes on the finish. Very well- balanced drink—the fresh vegetal and herbal flavors of the fin and the chartreuse blend perfectly with the bell pepper." —Justyn Myers HOOD RIVER DISTILLERS Tip Of e Hat: BROKER'S GIN Dylan Holcomb of House Mixologist and Hotmixology looked the part while presenting his Broker's Gin cocktail. Twisted Citrus ◗ 1½ oz. J.M V.O. RHUM ◗ ½ oz. Clément Créole Shrubb ◗ ¾ oz. fresh lime juice Shake ingredients over ice for 12–15 seconds. Double-strain into a chilled coupe. Garnish with a twist of lemon. Hailing from Martinique, Rhum Agricole is an official appellation of origin designating rums that are fermented from sugarcane, not molasses. A robust offering from one of the only distilleries that controls sugarcane from start to finish, J.M V.O. Rhum ages in a mix of new American oak and re-charred bourbon barrels, blanketing the palate in smoke and dried cloves. A much lighter offering, Créole Shrubb—an essential drink in Caribbean culture—blends white and aged Rhum Agricole with Créole spices and orange peels. This unlikely pair plays well together with orange sweetness, lifting up the wood notes beautifully. Tasting Notes: "Clément Créole Shrubb is a beautiful spirit and one of my favorites; the J.M V.O. Rhum has a nice rum funk with notes of cinnamon, sugarcane stalks, vanilla and earthy. The tartness added by lime and lemon peel added a nice acidity to the drink, making it a great backyard warm weather drink." —Brian Means "J.M V.O. Rhum featured big Canadian maple on the nose with a mild grassiness and slight burn that gives way to an undeniable smoothness.
